Cucumbers are a “cool” vegetable to help you stay hydrated and healthy during the summer heat. This crispy, low-calorie snack is 96% water, and contains only 16 calories per cup of cucumbers. Select fresh cucumbers that are bright green and firm to the touch. Avoid those that are darker green and have wrinkly, soft skin, as these are more aged. Antioxidant vitamins and other nutrients available in cucumbers are vitamins A, vitamin C, beta-carotene, vitamin K, lutein, and potassium. Cucumbers can be consumed with or without the skin, although the skin is a very good source of dietary fiber. In addition to eating cucumbers raw, add pieces to frozen smoothies and bring extra “cool” to your hot summery days!
