Crunchy Cucumber, Feta and Pecan Salad Serves 8
5 cups Romain lettuce, chopped
1 ½ cups chopped cucumber (buy seedless or omit seeds)
1 ½ cups roasted pecans, chopped into small pieces
2/3 cup Feta cheese, crumbled
2 tablespoons fresh dill
2 ½ tablespoons olive oil
2 ½ tablespoons white wine vinegar
1 teaspoon Dijon mustard
½ teaspoon sea salt
½ teaspoon coarsely ground pepper
Combine lettuce, cucumber, pecans, and feta in a large bowl; toss. Combine dill and remaining ingredients in a small bowl, stirring with a whisk. Add dill mixture to lettuce mixture; toss to coat.
