- 1 C Oil
- 3 Eggs, beaten
- 2 C Sugar
- 2 C raw Zucchini
- 2 tsp. Vanilla
- 3 C Chopped Nuts
- 3 C Flour
- 1 tsp. Baking Soda
- ¼ tsp. Salt
- 3 tsp. Cinnamon
- Combine oil, eggs, sugar, zucchini, and vanilla.
- Blend well and stir in dry ingredients.
- Spoon into well greased loaf pans.
- Bake at 325 degrees for 1 hour and 30 minutes.
- Makes 1 large, 2 medium, or 7 small loaves (Bake small loaves for 1 hour and 10 minutes.)
