Zucchini Bread

Ingredients
  • 1 C Oil
  • 3 Eggs, beaten
  • 2 C Sugar
  • 2 C raw Zucchini
  • 2 tsp. Vanilla
  • 3 C Chopped Nuts
  • 3 C Flour
  • 1 tsp. Baking Soda
  • ¼ tsp. Salt
  • 3 tsp. Cinnamon
Instructions
  1. Combine oil, eggs, sugar, zucchini, and vanilla.
  2. Blend well and stir in dry ingredients.
  3. Spoon into well greased loaf pans.
  4. Bake at 325 degrees for 1 hour and 30 minutes.
  5. Makes 1 large, 2 medium, or 7 small loaves (Bake small loaves for 1 hour and 10 minutes.)
