Tomato Feta Bruschetta

Ingredients
  • 8 Roma Tomatoes, diced
  • 2 Garlic Cloves, minced
  • 2 tbsp. Olive Oil
  • 1½ tbsp. Balsamic Vinegar
  • 2 tbsp. Fresh Basil, chopped
  • ¼ tsp. Salt
  • ¼ tsp. Black Pepper
  • ½ C Feta Cheese, crumbled
  • 1 loaf French Bread, sliced
Instructions
  1. Preheat oven to broil.
  2. In large bowl, mix tomatoes, garlic, olive oil, vinegar, basil, salt, pepper, and feta and let sit for about 8 minutes.
  3. Slice bread into about ¾ in. slices and put on baking sheet.
  4. Broil for about 2 minutes or until slightly toasted.
  5. Divide the tomato-feta mixture over bread slices and serve.
