- 8 Roma Tomatoes, diced
- 2 Garlic Cloves, minced
- 2 tbsp. Olive Oil
- 1½ tbsp. Balsamic Vinegar
- 2 tbsp. Fresh Basil, chopped
- ¼ tsp. Salt
- ¼ tsp. Black Pepper
- ½ C Feta Cheese, crumbled
- 1 loaf French Bread, sliced
- Preheat oven to broil.
- In large bowl, mix tomatoes, garlic, olive oil, vinegar, basil, salt, pepper, and feta and let sit for about 8 minutes.
- Slice bread into about ¾ in. slices and put on baking sheet.
- Broil for about 2 minutes or until slightly toasted.
- Divide the tomato-feta mixture over bread slices and serve.
