Cookie Crumb-Topped Apple Crisp

An apple crisp you can feel good about, with warm apples, cinnamon, and sweet crumbs o’ vanilla wafer cookies.
Ingredients
  • 4 large Granny Smith Apples (2 lb.), peeled and thinly sliced
  • ½ C Brown Sugar, packed and divided
  • 2 tsp. Ground Cinnamon, divided
  • ⅓ C Old-Fashioned or Quick-Cooking Oats
  • ¼ C cold Margarine
  • 25 Reduced-Fat Vanilla Wafers, crushed
  • 1½ C COOL WHIP LITE Whipped Topping, thawed
Instructions
  1. HEAT oven to 350°F.
  2. TOSS apples with ¼ C sugar and 1 tsp. cinnamon. Spoon into 8 or 9 in. square baking dish.
  3. COMBINE oats, remaining sugar, and cinnamon in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in wafer crumbs; sprinkle over apples.
  4. BAKE 30 to 35 minutes or until apples are tender. Serve topped with COOL WHIP.
