Cheesy Salsa-Mini Meatloaves

Meatloaf, meet tacos: the classic ground beef dinner favorite combined with tomato salsa and melty cheese. One of these minis has your name on it.
  • 1 lb. Lean Ground Beef
  • ½ C Finely Chopped Onions
  • 1 Egg
  • 12 Saltine Crackers, finely crushed (about ½ C)
  • 1½ C KRAFT Mexican Style Finely Shredded Four Cheese, divided
  • 1 C TACO BELL® Thick & Chunky Salsa, divided
  1. HEAT oven to 400ºF.
  2. MIX first 4 ingredients with 1 C cheese and ½ C salsa.
  3. PRESS into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.
  4. BAKE 20 to 25 minutes or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 minutes or until cheese is melted.
Serving Suggestion
Serve with a mixed green salad and slice of whole wheat bread to round out the meal.
