Roasted Asparagus
Asparagus may be substituted with broccoli or cauliflower.
Makes: 4 servings
Each serving contains: 67 calories, 3 g fat, 4 g carbohydrates, 6 g protein
- 1 bunch of Asparagus Spears
- 1 tablespoon of Olive Oil
- ¼ cup Parmesan Cheese
- Salt and Pepper (to taste)
Preheat the oven to 425˚. Cut off approximately 2 inches of the asparagus stalk. Rinse and pat dry asparagus, then place in a large plastic freezer bag. Pour the olive oil in with the asparagus, close the bag (let air escape out), and roll the bag in a back and forth motion to spread the olive oil over all of the asparagus spears. Place the asparagus in an oven pan, sprinkle with the parmesan cheese, and salt and pepper. Roast in the oven for 15 to 18 minutes, then remove when the vegetables begin to brown and are tender crispy. Delicious!
