Kids will have plenty of opportunity to take in “not so healthy” calories when trick or treating, so it’s a great idea to begin their day with something healthy to help provide them with wholesome nutrition before they haunt their treats at night, and you will be a hit for this special treat!
Once I found this Zombie French Toast recipe, and served it to my little ghoulish guests, it was an instant hit and brought plenty of smiles to their faces. With this delicious dish, your kids are going to get plenty of potassium, Vitamin C, calcium and iron. What a great way to start the day!
Zombie French Toast
Ingredients: 4- 6 slices of day old bread and “banana mixture”.
Banana Mixture:
1 ½ very ripe bananas
½ – 1 cup non-dairy milk, almond or soy
1 tsp. maple syrup
Cinnamon to taste
½ – 1 cup fresh baby spinach
A pinch of orange zest
Powdered sugar
Directions: Blend the banana mixture in a blender until smooth and pale green. Soak the bread in the green banana mixture. Spray nonstick cooking spray and cook bread on both sides until lightly browned. Remove the bread from the pan, and drizzle with a little remaining green banana mixture before serving. Lightly sprinkle powdered sugar over the top and serve warm.
Arrange the bread (French toast) on a plate with orange slices and a small serving of green banana mixture.
