Due to Hurricane Harvey and flooding, many families opened their homes to shelter family and friends. This creates a need for budget-friendly meals to serve large groups of people living in one home. Tips: Read the Market Basket sale ads, and shop for foods on sale, you can save many $$ this way. Buy items in large serving sizes or bulk to saves $$. Shop for meats that are on quick-sale, due to a close expiration date (purchase, take home cook & freeze for later, or use in a recipe immediately, or the recipe can be frozen and saved to eat later). Lastly, prepare meals that ‘stretch the dollar’, such as recipes containing beans, rice, and pastas. Ideas: Red beans & rice, black bean tortillas with Spanish rice, white beans, Spaghetti, Shepard’s pie, chicken/veggies/pasta bowl, refried beans on tortillas with shredded cheese, boiled eggs, sandwiches with sale item meats or peanut butter & jelly/honey.
