Cauliflower Mashed Potatoes are a great holiday side-dish. Cut down on calories and carbohydrates by using cauliflower instead of potatoes. Yes, while we love potatoes, they are loaded with carbohydrates (one thing we get too much of). With this recipe, you can afford to put a little cheese and bacon on top for picky eaters. Cauliflower mashed potatoes contain 93% of your DV for vitamin C.
Cauliflower Mashed Potatoes
1 large cauliflower, chopped in chunks
1 tablespoon olive oil
1 clove garlic, chopped fine
¼ cup parmesan cheese, grated
1 tablespoon reduced-fat cream cheese
Salt and pepper to taste.
Steam cauliflower until tender; approximately 7-10 minutes and then drain and set aside. Meanwhile heat oil and simmer garlic until it is softened; remove from heat. Puree cauliflower in a food processor. Add oil, garlic, parmesan cheese, RF cream cheese, and salt and pepper to cauliflower, and continue to puree until creamy smooth.
