Cool Smoothies for Meals

August heat and what to eat. The weather is hot and you are longing for something cool to eat, tastes great, and offers good health benefits. Market Basket has a wonderful variety of summer fruits and vegetables, which are great for smoothies.

When trying to stay cool, why not enjoy a cool smoothie for dinner. This Green Smoothie with Peanut Butter and Banana contains dairy, protein, fruit, vegetables, starch and healthy fats to meet all of your nutritional needs. Or perhaps you prefer more fruits and less vegetables in your smoothie; then try the Tofu Ice-Cream smoothie.

Green Smoothie with Peanut Butter & Banana

Makes one serving.

Ingredients:

  • 1 cup spinach or baby kale leaves
  • ½ banana, sliced
  • ½ cup 1% milk
  • ¼ cup vanilla, Greek yogurt
  • 1 teaspoon creamy peanut butter
  • 1 teaspoon honey

Directions:
Combine all ingredients in a blender and up to one cup of ice as desired. Blend and serve. Yum!

Tofu Ice-Cream Smoothie

Makes one serving.

Ingredients:

  • ½ cup firm tofu
  • ½ cup fresh or frozen strawberries (without sugar)
  • ¼ cup fresh or frozen blueberries
  • 1 teaspoon canola oil
  • Your preferred choice of sweetener to taste: honey, agave syrup, stevia, Splenda, etc.

Directions:
Combine all ingredients in a blender and ice as needed (when using fresh fruit, you will need ice). Blend until creamy and smooth. Delicious! This Tofu Ice-cream is healthy, tasty and can even be served for breakfast… kids love it! Tofu is high in protein and calcium.
