Vegetables are low in calories, carbohydrates, sodium and high in fiber, vitamins and minerals.
At Market Basket, we love the variety of spring and summer vegetables found in our produces aisles. Start with the beautiful display of color; red tomatoes, green and red peppers, cucumbers, yellow squash, purple eggplants, creamy mushrooms, and more. Purchase a variety of these vegetables, and you gain an excellent array of vitamins and minerals on your plate at home. For example, cucumbers are high in vitamin C and eggplants contain a good source of fiber and phytonutrients (antioxidant vitamins). Tomatoes are high in vitamins C, A and K, and are a good source of potassium. Include at least 3-5 servings of vegetables in your diet daily, and help prevent major diseases such as cariovascular diseases, certain types of cancers, obesity and diabetes.
